I listened to More or Less the other day, and they explained how the figure was derived?
I think the key thing was that Wetherspoon said "generated" whereas the Standard changed this to "paid" which isn't the same thing, and others have read the claim that way too.
Similar hoo-ha about this last year, with the calculations shown here: Wetherspoon, its customers and employees have paid £6 billion of tax to the government in the last 10 years.

The last 'spoons I was in (the Five Swans, Newcastle) were doing a great job clearing and cleaning tables, and I find this at least as often as indifferent or poor performance.
