Because of the solera system, the brew changes from year to year; solera beer was new to me. I knew it had been used for sherry and certain vinegars, but not beer; McAllan whisky is matured in sherry barrels which I imagine is something similar.

Little to do with a solera. Anything entering a solera this year isn't going to be drunk for years to come. They're
mixing new beer with a bit of old and selling there and then, a solera in reverse I suppose.
