I'm seeing the Joy Formidable at Koko tomorrow evening and have blagged an afternoon off work to go on the beers with a fellow attendee!
We decided to take advantage of it being a Thursday by drinking in good quality 'weekday-only' pubs.

The Speaker in Westminster is another one. Can't speak for the quality myself as, despite walking past every day, I've still yet to go in (although I may be changing that on Friday). Those that have visited think it's pretty good, though.
It's a fair trek from your other options, though.
The Dispensary in Aldgate is a bit east, but well worth a visit

are walking distance from Mitre/Jerusalem
and Seven Stars would fit between the two, though that isn't weekday only.
Also Cittie of York is in the immediate area and, although Sam's, is worth a look architecturally. I don't think it's open weekends.
I've also remembered the Hand and Shears but I wasn't mad keen on it when I visited a few years back...
Dispensary is a good shout - but probably too far east on first thoughts (I'll get the tube map out in a bit and plot the traveling!)

Hope I'm not too late. If you're around Chancery Lane try the Princess Louise on High Holborn, near to the junction with Kingsway and Holborn tube. It's one of London's Victorian heritage pubs
