There seems to be an infinate number of microbreweries springing up everywhere including some in the unlikeliest of places that I thought it would be useful to have a thread for people to add any new ones that come to light.

I have just received notification of a new Brewery called Redemption based in the real ale desert of Tottenham - the area doesn't have a decent pub for miles around! Looks like they have just managed their first brew - this is the link http://urbanbrewer.blogspot.com/

For you Kentish people (like myself), Moodleys based in Tunbridge Wells is another new one to watch out for http://www.moodleys.co.uk/ (http://www.hackneycitizen.co.uk/2009/09/25/%e2%80%98buy-booze-brewed-locally%e2%80%99-say-campaigners/)

Not a brewery as such, not yet anyhow, but my 'spiritual' local is experimenting with home-brews. The landlord and his mate have just produced their second, to be known as 'Gussage Gold'. I tried it after the first drop, a dark amber ale, 6.4, clear, but clearly unfinished, I could, would have, happily have drunk it then. The finished product goes on sale tomorrow,at 4.9 coinciding with Burn Night, which I will be attending.
The first brew was on sale just before Christmas, a good effort at a middle-of-the-road porter. Known as Gussage Porter it was either 4.5 or 4.9, memory fails me as to which, and well-drinkable. I should know as I probably shifted half a gallon of the stuff.
For sure, a long way to go, but the intent is there. Here's to Burns Night, Drambuie cream pancakes, Gussage Gold and all...:drinkup:...The choice now is ESB, Old Peculiar or the Beast...Oh happy day..........

This years (2010) Good Beer Guide has a handy list of 25 breweries that were going to start up from Sept09 onwards. The only one I've come across so far is the Liverpool Organic Brewery which makes a very pleasant easy drinking Golden Ale style Pale Ale (4%). Their website is here (http://www.liverpoolorganicbrewery.com/) but it's very unilluminating, there are a few details on this site (http://www.beermad.org.uk/brewery/4512).

I'll post the full GBG list if anyone thinks it may be useful to them.

The new Joules Brewery in Market Drayton is well underway , they are just waiting for a change in the weather so they can get on with the build . They are aiming for 300 barrels a week . They also own 15 pubs in Shropshire/Staffs which they are restoring to original plans where possible . Sounds good .

Now that does sound exciting Oggwyn ( takes alot to do that these days ) Not only real ale but the original plans sounds great. To many of our pubs now have that openplan, all inclusive great barn of a place feel about them. Must do some checking up on that.
Looked at their web page ,I wish they would buy a few pubs in my area. I know the Bricklayer Arms ,Salop I lived at the opposite end of the street when a teenager.Last visited about 4 years ago when it appeared to be in the doldrums.

Hey Roger, great thread! However, it does sound rather familiar. :D The last brewery that I discovered was the Ilkley Brewery http:// www.ilkleybrewery.co.uk They've only been brewing since June, but won their first regional SIBA award in November for their 'Mary Jane' brew. I've enjoyed all of their beers I've tried so far. One to watch out for.

I found a beer from a brewery I hadnt heard of before over the weekend, Wild Hop Brewery O.P.A. I cant find out much about this other than a suggestion on Stonchs Beer Blog that the brewery may have closed in 2007 and that Daleside are now brewing under that name.

Dunno about who is brewing it now but they existed only briefly as Wild Hop based in Hartlepool before closing in 2007, they only opened in March of that year.

Not so much a new brewery as a new beer, Fullers Bengal Lancer 5% cask beer or 5.3% in bottles. Should be in their pubs soon and the free trade and supermarkets in March.

Blimey, one of my less frequent regular watering holes, The Alice Lisle will be stocking it, and it was first on the list. Thanks, hondo.
Not as bad a pub as it looks, the Lisle. Hordes of screaming kids in summer and at weekends, so so food. But there is a quiet drinkers bar off to one side, and the ale is usually top notch. I just hope they don't take the HSB off to put the new one on...

Not so much a new brewery but a new brewery tap , anyone who knows Oakengates (probally only Robcamra on here) will know at the top of the street are 3 pubs The Duke of York , the Station (up to 9 real ales on) next door to each other and across the road the Crown(local camra branches local) but 2 doors up from the Station is the Fighting Cocks which has been closed for the last 4 years , a good reliable source has told me one of the local Microbreweries has brought it and plans to use it as the Brewery Tap

I hope they're going to change the name I have had a bad experience with similar pub names.

Not anymore Conrad, I got made redundant in September.

Mind you, since then I've sold over 150 items on Ebay that have been in boxes under the bed in the spare room for the last 11 years!

I have been looking out for some of Tottenham's Redemption Brewery products which was the initial prompt for this thread. According to comments left on their Blogsite the beers are very good (well, I don't suppose the ones saying they were bad would last long on the site). The Wenlock and the Gunmakers have both stocked their ales and the brewery boss has indicated that the landlady at the Elbow Room in Tottenham is happy to stock it which would be my best bet in finding it but they have to get the OK from Barracuda first.

Yes it is. H&W have closed a few local houses and I gather that a large number of those that remain are 'available'. I'm expecting the place to be open as we're seeing a band. Many local pubs are doing that these days. I suggest that Badger pubs have a more pressing need than most, as few people are going to visit one of their pubs to try their dreary beer-flavoured beverages.

Is it just the local pubs not looking after the beer, or do others find H&W beers utterly uninteresting?

I used to love King and Barnes, and rarely had the chance of drinking H and W , living in Kent. We do quite often travel to see friends in West Sussex and Hampshire, and I do my utmost to avoid having to meet in a H and W pub, as I find the beer depressingly dull. A great pity, as a lot of the pubs are gems, and I generally like beer from the (smaller) regionals.

Putney Bricklayers had Cam Fell at their Yorkshire beerfest yesterday but I went for Slingers Gold from the same (very) new brewery. Amongst others...
Pleased to see they eased back slightly from a pricing policy which was getting ott at this award winning pub - generally 3/3.20 rather than the 3.20-3.60 which has previously been the case. Not that I'm advocating that as a good price, but this is SW Laaarnden!

Indeed, congratulations Ed, keep us informed of your progress.

Where is it actually located?

Eddie86
02-03-2010, 01:10
At the minute it's situated in what appears to be a Monty Python sketch.

My instructions when I went to have a look were:

Go to Cwmbran
Go to High Cwmbran
Continue to Upper Cwbran
Keep going
(me) In which direction?
Up.
When you stop going up, you'r nearly there....

The brewery has been going, and indeed growing for over 12 years. Whilst nothing easy on the eyes (Pictures when it arrives), the technology involved is very impressive - all custom built.

For example ***WARNING - BREWERY BLAH BLAH COMING UP*** the Copper is designed with a 2" air pocket between the inner skin and the outer. Most coppers have an element and one skin - think of a modern kettle.

This one is flame heated (gas or oil), and the 2" gap means the heated air can surround the copper. Instead of just being heated from the bottom, it's heated from the bottom and sides - roughly half the time I'd planned to get a boil going!

Excellent news Ed, I look forward to the guided tour with full technical explanation once it is all going.

Are you still in need of planning to house it?

Eddie86
02-03-2010, 13:51
The gents at Cwmbran have kindly offered to deliver it - I'll find out when later in the week.

No planning permission needed - they are all happy. The final people to keep happy were the building regs, and they'll get back to me today, although the initial conversation was very positive.

All being well, I'd like to be brewing by the end of April, but that depends on when the brewery gets delivered and if I can get all the fixtures and fittings I need. And the roof, of course. But from what I've gathered that's an easier-than-it-sounds-job.

First recipe is ready - Kilvert's Gold.

2nd recipe I've started on - think along the lines of a rich 4.2%, darker than a ruby. Malty flavour with a delicate hop count just to balance. And you only pay duty on what you sell - I think there may be quite a large 'development period' first, which if all goes to plan I'll let you know about. I'm sure we'll have an official opening etc etc as well, which at the rate we're going in the bar should be in line with the bar being 100% finished! (We got the real bar surface on and secured today instead of the temp one we had!)

As for the technical explanation, imagine soaking a tea bag in warm water for an hour. Then drain off the liquid into your kettle, and add sugar. Boil for 90mins. drain into teapot, add milk, and allow to stew for a couple of days whilst the milk sinks through and mixes thoroughly...

Conrad

Like most chemists, I am more proficient where it involves burning or exploding.

I'm sure I can come to an amicable resolution with a sealable heating vessel and some yeast

Eddie86
02-03-2010, 19:10
The life cycle of yeast in beer brewing has 3 distinct stages:

1. Initial Period

cell wall preparation
nitrogen uptake
sugar uptake
oxygen uptake

2. Respiration

phosphorylization
carbon splitting
redox reactions
formation of pyruvic acid
formation of Acetyl CoA
Krebs Cycle

3. Fermentation

Pyruvic acid --> ethanol

Inorder for the yeast to make use of the abundance of 'food' in the wort, it must first make it's cell wall permiable to the nutrients. The use of reserve nutrition is used in this process, most notably glycogen (a healthy yeast cell will be 40% [dry mass] glycogen). Oxygen is absorbed very rapidly into the cell. The yeast then starts to take in amino acids, elementary peptides and sugars. The sugars first brought through the celll wall are the simple sugars; glucose and fructose. Sucrose is acted on by the enzyme invertase, the products; glucose and fructose are then ingested. Maltose and Maltriose are the last sugars to be used, they are transported across the cell wall intact and are metabolized into glucose by a-glucosidase.
The yeast, after ingesting these nutrients, starts to respire, evolving CO2. This stage is aerobic and involves the redox reaction NAD+ --> NADH2 This phase includes vast reproduction for the cells, by means of budding. see illustration below. The last two steps, the formation of Acetyl CoA and the Krebs cycle are alternative pathways in the process and do not directly lead to the formation of ethanol. (Note that theoretically one glucose molecule will yield two ethanol molecules, this yield is significantly less due to side reactions at various intermediate points)
http://www.rpi.edu/dept/chem-eng/Biotech-Environ/beer/biochem/glycolysis.jpg
Ultimately the pyruvic acid created during respiration is metabolized into acetaldehyde and then to ethanol. This process is anaerobic and begins when the dissolved oxygen in solution is exhausted.

When I studied Forensic's that was classed as Organic Chemistry by the lecturers. We called is something different...

I'll be honest, whilst I am intrigued by the chemical stuff, and indeed a good knowledge of that can help enormously with consistency and development of beers, I do like just chucking the stuff in and knowing that somewhere down the line will be beer :D

Forensics, that is a bit of a sexy course, was coming into fashion quite heavily as I went through. Realistically I would have called it BioChemistry, arguably it is Organic in that it involves Carbon, but I tend to think Chemistry deals with strict Chemical formula and understanding every single atom in the equation, once you start talking about ATP, ADP and the Kreb cycle that is pretty firmly headed up the Bio branch.

It fascinates me when science is bought into food prep, saw a fantastic piece by Heston Blumenthal about making the perfect Fish & Chips and was just fascinated. Best place to start is definitely chuck it all in and see what happens though, most of the best discoveries are done that way.

"Heston Blumenthal about making the perfect Fish & Chips" Quote Conrad

I think I prefer to trust Rick Stien or Delia with my stomach . Snails in Garlic Butter I dont mind but if they were meant to go in ice cream I am sure the continentals would have done it years ago. May be I am old fashioned. in fact I am certain of it, but I keep clear of Hestons stuff. Scientific research into Gastronomy ain't taking place in my stomach however fascinating it is to some people. I have never cooked and eaten a deep fried Mars Bar. None of the recipes say whether you remove the wrapper or not or is it a matter of personal taste.

The extract he posted is, it is the old gem of the yeast being alive. The formulas describe how the yeast digest all the sugars and the sequence it digests them in.

My memories of biology was it was all about memorising loads of sequences because they didn't do any real science that allowed you to play with things. That and growing cultures on cell dishes that they just dropped dyes on to see what colour they went. Give me a dirty great atomic spectrometer that burns things any day ;)

There is a beer coming on at Leicester beer festival I believe down as Dawkins brewery, and some have thought it to be a new brewery.

I had one of their beers in Bristol last September, and it was brewed by Matthews for the Dawkins pub chain.

I have heard that Natthews have recently been taken over by Dawkins, and the beers will now be brewed under the Dawkins name.

Yes, I noted Dawkins Green Barrel at Bristol's Portcullis, brewed by Matthews and named after owner of Dawkins Taverns who acquired Matthews. Naming convention maybe smacks a little of nepotism?

I must admit, it's going to take a little bit of time to get things rolling. The first delivery arrives Wednesday, but with an issue in a couple of the bedrooms I have to prioritise. I would like to think that, being realistic, I can brew in time for the beer festival, and given that's at the end of September (read: end of season) I'm more than sure that I could offer a special deal for PUG with regards to the rooms, if there was enough interest. Obviously something like that I have to have agreed by the others, but I can't see it being an issue.

PS I'd like to say thank you for all the support shown. Now it's too late to turn back I'm getting butterflies, but the level of support on here as well as from locals and indeed other brewers has been overwhelming.

Anyone for a pint of Oldboot's?

I'm happy to worry about it closer to the time, most important thing is to not add any more pressure.

When looking at the Dark Star site today, I was reminded of the K&B vs H&W lament earlier in this thread. I'm not aware that I ever had any K&B beer but wouldn't go out of my way to avoid Badger, even if it wouldn't be first pick out of a line-up. Do they still do Stinger? That was ok, even if I had to laugh about HFW's 'organic' nettles, hehehe.

Anyway, my point was meant to be to alert you K&B fans to the tasting notes on Dark Star 'Festival'...

"Festival. 5%. A chestnut-bronze coloured bitter with a smooth mouthfeel & freshness: a classic Sussex style strong bitter brewed as a Dark Star version of 'Festive', a former great Sussex beer from King and Barnes".

Any of you Kent chaps heard of this:http://www.olddairybrewery.com/

I think they are based quite near us in Rolvenden, but the local bush telegraph is mysteriously silent. Blogger Ed of Ed's beer site, works for them, I think. If I come across their beer a detailed report will follow!

Sorry to self quote, but "Whinger" on pubsandbeers.co.uk has reviewed their Red Top at the Star in Rolvenden: it seems he quite liked it, and I hope to get there sometime next week.

PaulOfHorsham

Do they still do Stinger? Think the nettles beer may be one of their seasonals.

Festival (badged as by 'Essential Beers' for some reason - must ask) is, along with Arundel Sussex Gold, a permanent beer at The Beer Essentials (http://www.thebeeressentials.co.uk/) where I spend much of my beer money.

I have just received notification of a new Brewery called Redemption based in the real ale desert of Tottenham - the area doesn't have a decent pub for miles around! Looks like they have just managed their first brew
[/QUOTE)]

Met Quinno in the Harp for a swift few last night before we both headed off for different gigs - had my first Redemption Ale - Urban Dusk 4.6%. Had quite a bitter taste, perhaps a bit too sharp for my liking and whilst it was perfectly drinkable, it certainly won't be in contention for BotW.

Not exactly a new brewery yet but while walking through Whitchurch on Thames today (Oxfordshire) I spotted one of those planning notices people have to display. It was outside The Old Dairy, Walliscote Farm, and concerns an application for a change of use to a microbrewery plus shop. Hell of a posh area, chocolate box cottages etc, but good luck to them.

We did an overnight in Wakefield last Saturday to break up the journey home from Scotland and I did intend to pop into O'Donoghues to see if there was some live music on. We didn't arrive until quite late (I did send you a last minute text message to see if you were around) and most of the evening was spent in the Red Shed. I popped into the Barristers as it was empty and was one of the few places showing the footy and then did the Black Horse which I missed out last time. Nice enough pub but poor ale choice. Had to finish off with a trip Fernandes although there were barely half a dozen people in there at 11 which was a shame. The Westgate run is a lovely experience on a Saturday night!

As a diversified farmer I was highly impressed (and put in the shade) by their energy: apart from farming 575 acres of arable and free range chooks, they've also gone and set up the eponymous brewery, as well as running a nursery. I'll keep an eye out for this one:their winery and vineyard are just down the road from us at Smallhythe. They already produce some ales in bottled form-brewed at Hepworth's. I've enjoyed their Cobbs IPA, and have banged on about it in the Bottled beer thread, and am looking forward to trying the Porter when I come across it. I can't comment on the lagers, though.

Our friends at pubsandbeer.co.uk referred to Abigale Brewery commencing operations. A quick google told me that it is based in lovely Ashford Kent, and is indeed due to start work, producing a Bitter and a Golden, using Kent grown Cascades.I'll keep you posted. If its as good as Old Dairy, a recent start-up in the area, it will be very good.

My local has had the Gold Top as its guest for the last few weeks - wonderful stuff. I have had the Blue Top at a festival but yet to see Red Top but if it's as good as the other 2 then Old Dairy are on to a winning formula.

A thought for the day.
I find the appearance of all these new breweries both encouraging and rather curious. I posed the question in another 'nameless place' as to whether we were (are) living in a golden age of real ale. Most, as I remember, agreed we were, but many, including myself, were pessimistic as to how long it would be before the big boys spoiled everything.
I'm a sight more optimistic now and it crossed my mind that we just might be heading back toward the days when almost all ale was brewed locally..........

As mentioned on the BOTW thread, I recently tried 'Original 45 Porter' from West Yorkshire's newest micro Revolutions Brewing Co. and fabulous stuff it was too. The theme of this brewery suits Roger down to the ground, as the two music mad founders have decided to brew beers of only three strengths 3.3%, 4.5% and 7.8%, reflecting the golden age of vinyl. If anyone has the Space Hoppy IPA, I'd like to point out that I named that beer during a drunken conversation here (http://www.pubsgalore.co.uk/pubs/1762/).

What I want them to do is get a space hopper cutout on a spring and stick it to the clip so it bounces during the pull :)

I have also suggested a golden beer called Binghams Bling, either with Mr T's face or a small gold plastic medallion over each clip.

The former Hidden Brewery site near Warminster, one of the five small breweries local to Salisbury, has reopened under the name West Country Brewery. There is no connection to the previous brewery, and as far as I know, no links to the Bell at Wylye (though I stand to be corrected on that score as these things are not always obvious).

The owner, brewer Rod Macdonald, has announced that 2 ales are ready for distribution, but no names have yet been given (ideas welcomed). They are a 3.8% best bitter (West Best?) and a 3.8% blonde ale which should hopefully be seen in local freehouses.

Subtle melon aroma & flavour? Sounds like another bland number from the greedies of westgate. Many wines mention melon in tasting notes, but usually in conjunction with peach/pear/pineapple/apricot/citrus fruits/floral notes etc. If melon (and subtle, at that!) is the extent of the brewer's ambition then, well, let's just say Tara & others could teach them much.

The Kirkstall Brewery Company (Leeds) has been brewing for a few weeks now, but I didn't spot the website until yesterday:

The Black Band Porter (5.5%) is reported to be excellent.

Their Dissolution IPA was excellent in Mr Foleys on Saturday.

Somehow overlooked your mention in BOTW, ROB. Apologies.

Forty minutes to kill in Leeds yesterday teatime saw my considerable girth in a shambolic jog/trot  from the station to Mr Foley's and Veritas in search of KBC beers. Wasn't overly struck with Three Swords to be honest, but the Black band Porter is an absolute stunner. Definitely recommended. Unfortunately, no Dissolution IPA in sight.

A frightening mental image there A&H, but speaking of new breweries have you seen this (http://www.beerreviews.co.uk/beer/magic-rock-brewing-launch-north-bar-leeds-30th-june-2011/)?

Thanks for the heads up 'ob', but family commitments have put the kibosh on it.
