Well, it’s fair to say that Rooster’s have recently been at the forefront of packing flavour into *beer of*late, but the Fozard twins’ latest innovation is sure to tantalise your tastebuds. Like hops? Then this as -yet – unnamed beer is for you.
Basically, they’ve only gone and *created a continuously – hopped beer. *Not just in the boil, but fermentation too. At the risk of not having the machinery or automated means at their disposal, they really put their money where their mouth is in order to create this hop-monster.
Tom explains: ‘*You may have heard of a beer being dry-hopped, which is a process where hops are added to the fermenter and / or conditioning tank to help boost the aroma and flavour of the beer. You may also have heard of a beer being continuously hopped, whereby hops are added at regular intervals, usually every minute, during the boiling stage of the brewing process. These processes are not uncommon amongst the beer we regularly brew, but, when you put them together…’
The beer has been hand-crafted in the conventional manner, but, having waited 24 hours for the yeast start doing its thing, our two brewers then set about working in shifts to add a generous handful of hops to the fermenting vessel every ten minutes, a process that lasted four days and nights until the beer had finished fermenting. Sleep – simply put – was not an option.
Ol Fozard, Head Brewer, comments: “The nights were the hardest part, but Tom and I kept each other going with regular games of I Spy and kept going until the end. At the time, we couldn’t help think to ourselves, ‘Why would anyone do this?!’, but we had the determination to see the job through.”
Assistant Brewer Tom Crapper adds: “We hope our efforts won’t go unnoticed! I’m looking forward to catching up on some much needed sleep, but I feel we’ve done something that, apart from anything else, will turn a few heads.”
